COME AIUTA IL GELATO
Una visione dal vivo di ogni turno, ogni server, ogni punto vendita.
Entrate, coperture e manodopera di ciascuna sede: aggiornati durante il turno. Il sito che sta scivolando viene segnalato nel briefing mattutino, non nella revisione di venerdì.
Tasso di upsell, rotazione del tavolo, controllo delle dimensioni in base al server. Accoppia il tuo server in ritardo con il tuo più forte prima della fine del turno.
Corse nulle, gruppi di comp, sconti fuori schema: sono emersi sul posto mentre c'era ancora tempo per parlare con il GM.
Quando il ritmo di un sito è indietro del 14%, il Coach consiglia un'azione specifica (manodopera modificata, spinta alla fidelizzazione, scambio di menu) in base a ciò che ha funzionato prima.
COSA CAMBIA
Interventi più rapidi, siti più nitidi, meno sorprese del venerdì.
La sede che ha bisogno di te invia il segnale prima che il pubblico lo sappia. L'azione si sposta verso lo sbocco giusto al momento giusto.
Smetti di trascorrere la visita rincorrendo ciò che il rapporto ha mancato. Utilizzare la visita per istruire la squadra su cosa fare dopo.
Ciò che funziona nel Sito 4 si propaga al Sito 7. Gli standard a livello regionale rimangono rigorosi senza alcun promemoria.
